My Version of Chili Empty

Ingredients:

1 pound meat, ground (beef, turkey, chicken, or venison work best)
1 Vidalia Onion chopped
1 clove garlic
2 large cans (or fresh if you have it) dark red kidney beans
2 C. diced tomatoes
Chili powder to taste
Cayenne to taste


In large open stock pot, brown meat, draining fat from botton with the exception of approximately 2 tsp.

Add onion and saute until translucent

Add garlic, sautee additional 2 min

add chili powder and cayenne at this time and lower heat to med, simmer for 5 min to allow for seasoning to permeate meat

add tomatoes and beans

Simmer for at least 45 min over low heat. The longer it's allowed to simmer, the better it is.

Serve with cheese or sour cream, or whatever topping you prefer.


Keeps in fridge for 4 days (if there's any left LOL)

Freezes up to 3 months.
